Eggplant Parmesan... Made by "Uncle A."... Delicious... Forgot to get a picture... Boo-hisss... It was fantastic, though. So below, is a picture, from the Net... ~~~~~~~~~ But his looks better!!!!!!!!

For the breading on the eggplant slices, he uses ground up G/F pretzels, so I can eat it. Granted, there is real cheese in/on it. But if I take my Lacta*d, I can have some. Even though I will probably "pay" some, the next day... But all in all, now and then, I can have this dish, which I love, love, love.
"Dragon's Keep"... Another book read... Read more about it, by clicking here................
One hears about a "square peg in a round hole," as being something which doesn't fit. But "Uncle A." sezzzzzzzzzzzzzz, that this is the way they are supposed to be made. So, where did the "not right" connotation, come from, I wonder????
Just sunlight.............. :-)

John defers to Uncle on the square pegs in round holes as he has not made a lot of furniture...interesting observation.
The eggplant parm must have been so good...a real treat.the biggest treat would be to have your own sweetie doing the cooking.

The eggplant Parm looks DELISH!! I can't believe I've never had that.
The eggplant parmesan sounds "good enough to eat", Auntie :D
Interesting thought about "square pegs in a round hole". Uncle A would know being a talented wood-worker as we have all seen.
Your photos are always so interesting and today's are, too!!!
Hugs~~~
That eggplant sure does look good. I miss my Italian food.

I guess to every so called rule there is a wrong, now I can shove in the square and be right!
Yummy!!! Happy Monday
How nice to have a treat like Eggplant P. Has Uncle A ever tried it without the breading? We like it that way too.
Lovely to see your sunlight, and very fascinating to speculate on the square peg idea. What is the wooden thing in the photo?
I love Eggplant Parm, but never make it. Wish my hubby knew how to cook...I get sooo tired of it. Sez me who is trying not to be jealous!
About the BPPV, I just refuse to do the Maneuver which requires you to hold the head on the affected side for much too long for me. It feels like a sledgehammer has hit me upside the head when I turn on my left side. I couldn't endure the awful sensation that long. Yikes!! Doc says I have Meniere's too, which makes me feel yucky and dizzy with a lot of head movements. Thankfully, I don't have these episodes very often. (Sorry my explanation is so long)
Great observation of the square peg in the round hole...and as always I love your sunlight pictures as much as your shadow pictures.
Oooo I haven't made eggplant in *forever* Yum!
